KryonOS boots an ESP32 into a desktop, and its apps install over Wi-Fi

A GPL-3.0 GUI and JavaScript runtime for the ESP32: flash the board once, then install and update apps from an on-device store, on a machine with about 90 KB of RAM to spare.
